Harvesting and drying

The grapes are healthy and perfectly ripe, and have already been manually selected during harvest, in the first two weeks of October, in which the more sparse clusters were chosen with the grapes not too close together, so that air can circulate.

These little dark “nuggets” are spread out on a plateau, large wooden boxes, which are then placed in the loft that we own, which can contain up to 120,000 kilograms of grapes. Here grapes undergo a drying process that lasts about 120-150 days.
